INGREDIENTS
• 1 kg potatoes
• 200g carrots
• 200g peas (can be frozen)
• 200g green beans (can be frozen)
• 1/4 cup chopped parsley
• salt
• pepper
• 2 eggs
• 100g Parmesan
• 3-4 eggs, beaten
• 2 cups breadcrumbs
METHOD
Boil and peel potatoes and carrots.
Cut the carrots, and green beans.
Mash the potatoes, add 2 eggs, salt, pepper, parmesan
Add carrots, peas, asparagus beans, and parsley.
Form balls and press with a flat bottom of the cup
Dip in egg, then in breadcrumbs, and fry until golden brown
